Yield
24 churro bites (about 6–8 servings)
Total Time
35 minutes
- 10 minutes prep
- 12–15 minutes bake
- 10 minutes coat + dip
Supplies Needed
- Mini muffin pan (24-count) or two 12-count pans
- Mixing bowl + whisk/spatula
- Measuring cups/spoons
- Small bowl for cinnamon sugar
- Cooling rack (optional, but helpful)
Ingredients
Churro Bites
- 1 box Benevolent Bakery Confetti Cake Mix
- Eggs, oil, and water as directed on the package
- 3 tbsp melted butter (for brushing after baking)
Cinnamon Sugar Coating
- 1/2 cup granulated sugar
- 1 1/2 tsp cinnamon
- Pinch of salt
Strawberry Cream Dip
- 1/2 cup cream cheese, softened
- 1/3 cup powdered sugar
- 2 tbsp strawberry jam (or mashed strawberries)
- 1–3 tbsp milk (to thin to dipping consistency)
- Optional: 1/2 tsp vanilla
Step-by-Step Instructions
- Preheat + prep the pan. Preheat your oven to the temperature on your cake mix box. Grease your mini muffin pan well (butter or nonstick spray).
- Mix the batter. Make the confetti cake batter exactly as directed on the package. You want a smooth batter with no dry pockets.
- Fill + bake. Spoon batter into the mini muffin cups, filling each about 2/3 full. Bake 12–15 minutes (until the tops spring back and a toothpick comes out clean).
- Mix cinnamon sugar. While they bake, stir together sugar, cinnamon, and a pinch of salt in a bowl.
- Brush with butter. Let bites cool in the pan for 3–5 minutes, then remove. While they’re still warm, brush lightly with melted butter.
- Coat like churros. Roll each bite in cinnamon sugar until fully coated. (If you want extra coverage, do a second quick butter-brush and roll again.)
- Make the dip. Beat cream cheese + powdered sugar until smooth. Mix in strawberry jam. Add milk 1 tbsp at a time until it’s creamy and dip-able.
- Serve. Pile churro bites onto a plate, sprinkle a tiny pinch of extra cinnamon sugar over the top, and serve with strawberry cream dip.
Tips & Variations
- Extra “churro” vibe: Add a tiny pinch of nutmeg to the cinnamon sugar.
- Make-ahead: Store bites airtight for 2 days. Re-warm 10–15 seconds in the microwave and re-roll in cinnamon sugar if needed.
- Party mode: Serve with toothpicks and a dip cup—super easy for a platter.
